Sweet Potato Vines

April 14, 2010
Sweet potatoes are grown mostly in the South and are planted in the spring by "slips." Slips are the small rooted pieces of the vine that grow from the "eyes" or buds of the potato. Place your sweet potato in a jar of water. Keep the top 1/3 of the potato exposed by placing toothpicks into the sides. The pointed end of the potato should be down in the water. In just a few weeks a vine with several stems will begin to sprout. If stems are weak you can tie the stems to a stake. Place the jar in a bright, sunny location. If the vines gets too long, cut them back a few inches to force the vine to get bushier.Your sweet potato vines can be planted outside in late May to produce sweet potatoes that can be dug and eaten in the fall.
Just in time for Thanks Giving!
