I have a large family, with four growing, active boys in it.  They get hungry and when they do, I don't have much time to act.  Those days that I don't have a plan absolutely kills me.  Because I am so busy, I am finding that I don't have a plan more often than not.  Not a good thing!  Have you heard of the Six O'Clock Scramble?  Apparently, I am not the only mom that has issues with planning ahead, so Aviva Goldfarb has come to the rescue! 

Aviva has created the Six O'Clock Scramble, a weekly online menu planner with quick and healthy meals the whole family will love. She has created a website to help us manage and plan ahead to avoid the "Six O'Clock Scramble," trying to figure dinner out at the last minute.  She has so many fabulous ideas that she has written a couple of cookbooks.  This week, I am very excited to share with you SOS! The Six O'Clock Scramble to the Rescue Cookbook.  This book is packed full of earth-friendly, kid appealing recipes for moms like you and I!  Hooray! I received a copy of the book to review and it is incredible--you will love it!

I asked Aviva what inspired her to write a cookbook that was earth-friendly.  She told me "As I’ve thought and written more about food over the years since I started The Scramble, I’ve realized that we can’t really separate the food that we eat from the way it’s produced and I’ve learned about the impact our food choices have on the planet.  As I started letting myself really think about how food makes it from pasture or sea to our plates, I decided to start to implement some changes in my shopping habits and my family’s diet. As it turns out, these changes have made eating even more pleasurable, rather than forcing us to make many sacrifices.  What’s more, these little changes, such as eating seasonally and locally, eating less meat, composting, and bringing our own grocery bags to the store are simple to make and are the pillars of a more environmentally-friendly diet!

I wanted to share some of those changes we’ve made in my family along with the easy, healthy and seasonal recipes that have made it so easy and delicious to eat in a more environmentally-friendly manner, so I’ve put them all together in this cookbook."

I also wanted to know if her kids actually eat the meals in this cookbook, since kids are notoriously picky eaters. Aviva says "All the recipes in the book have been tested by my family. My kids have become pretty adventurous eaters because we’re always trying new recipes. They each have some favorites in this book, of course. My daughter Celia, who is 11, loves “Celia’s Simply Irresistible Spaghetti”, of course, which I created for her, and she also adores the “Pineapple Chicken Stir-Fry”. Our son, Solomon, who is 13, is a big seafood guy, so he loves the Spice-Tossed Shrimp with Parmesan Grits, and he loves anything with a Mexican/Southwestern flare, so loves the Chips Ole, and he thinks the sauce is fantastic on the Honey-Curry Chicken."
