Fall Recipe

I recently received a very welcome package in my home.  An organic fruit and vegetable box from The Fruit Guys.  The Fruit Guys deliver fresh, organic fruits and vegetables that are in season--straight to your doorstep.  This box was fantastic!  Inside were both wonderful items that I was familiar with and some that I had never heard of--all fresh and ready to be consumed.

Garlic, zucchini, red swiss chard, roma tomatoes, cremini mushrooms, pears, peaches, dapple pluots--there was a ton of stuff in this box, with most of the vegetables being from Pennsylvania and the fruit from California.  Now I know what to do with the fruit, and a couple of the vegetables.  But the great thing included in this box was a recipe to incorporate it into a meal for our family.   It was wonderful!

 

Spaghetti with Roasted Garlic, Tomatoes, and Mushrooms

INGREDIENTS

1 head of garlic, peeled but left whole

6 tomatoes, quartered lengthwise

12 mushrooms, halved

3 T olive oil

1/4 cup chopped mixed fresh herbs--parsley, basil, dill, thyme, oregano, majoram--whatever you like.  But use oregano and majoram sparingly so as not to overpower the other flavors

1lb spaghetti

Parmesean cheese

PREPARATION

Preheat oven to 425 degrees

Toss the garlic, tomatoes, and mushrooms with olive oil.  Spread a single layer on a rimmed baking sheet. Sprinkle with salt and pepper.  Roast for about 20 minutes until the tomatoes and garlic are softened and the garlic is slightly browned, but not burnt.

When the vegetables are about halfway done, cook the pasta al dente.  Toss with the vegetables in a large bowl with the herbs and parmesean cheese to taste.

This dish is also good tossed with cubes of fresh mozzerella

Serves 6.
